Meal of the Week
This sheet pan dinner highlights fresh late summer veggies, but is still rich and flavorful thanks to the sausage that cooks alongside everything else. Perfect for a busy weeknight dinner.
Makes 4-6 servings.
1 16oz Package Gnocchi
1 Pint Carton of Grape Tomatoes
1 One Green Zucchini
1 Yellow Zucchini
4 Sausage Links (I used Amylu Chipotle Pepper Chicken Sausage)
1/2 Cup Olive Oil
Salt, Black Pepper, and Garlic Powder
Fresh Basil (optional)
Preheat oven to 400 degrees
Divide the gnocchi and grape tomatoes and spread evenly across to sheet pans
Slice the Zucchinis (I like to cut them in half lengthwise first, for smaller bite size pieces), and spread across the sheet pans.
Slice and layer on the sausages.
Drizzle both pans generously with olive oil.
Add Salt, Black Pepper, and Garlic Powder.
Bake at 400 degrees for 20-30 minutes.
Dish up being sure to get a selection of all the ingredients. Garnish with fresh basil if desired, and enjoy!
